Best way to transfer files using target disk mode?

I'm using the target disk mode to transfer files from an older mac to my new one (mostly for backup) and every time I try to move all my images or files it freezes my host computer. Is there a certain way I should be transferring these? I'm mostly just highlighting the files in the folder and moving them to my desktop. That's when it freezes and I just get the whirly mouse guy. My images folder has 10,000 files... is this just too many to transfer at once? I'm mostly concerned about getting my iphoto and itunes library off of my older mac... Any suggestions? Thanks!

You can move files over using an ethernet cable and file sharing enabled. If they're already on the same network and in the same workgroup you can transfer files via the network.

So the answer is yes to boot usb but only sometimes Target Mode.
The following systems are compatible with Target Mode Via a USB or ethernet cable:
